Cao Lau, unique dish originates from ancient town of Hoi An. Cao Lau looks like noodles, but not noodles. Many argue that this item is of the Chinese, but the Chinese here do not recognize it. As for the Japanese, it is said it likes their udon noodle but with different flavors and way of processing.
The essence of Cao Lau is the noodle strip itself, usually meticulously prepared. First, soak them in ash water from wells in Cham Island, 16 km from Hoi An. Then carefully filter, mill into flour, dry and roll into pieces, slice into strips, steam and dry several times to make the noodle strips.
The dish is usually eaten with sliced pork Xa Xiu, a kind of Chinese food, and different greens, topped with fried pork rind. Topped with scallion, and sometimes with lime or chili jam scallion.
